Sandra Bullock opens up on The Today Show about her latest project ... helping to revive Warren Easton Charter High School in New Orleans which suffered more than $4 million in damages during Hurricane Katrina.

The actress avoided any and all talk about her ex Jesse James, but did tell Matt Lauer, "Everything works out the way the universe wants it to work out."

In addition to discussing her passion for revitalizing the high school, Sandra beamed while talking about her 8-month-old adopted son, Louis ... whom she describes as her "little cajun cookie."

Miss Bullock adds, "He likes to dance and celebrate ... he's extraordinary." Oh, and she makes sure the world knows, "He has a healthy poop schedule." Can Sandy be any cuter?

Great to see that she's clearly moved on with her life after the very public drama with her ex. It appears that Jesse has moved on, as well, with new love Kat Von D.
